With days getting shorter and colder, what better than a quick and comforting recipe for dinner? Try this delicious and easy to make chickpea and rice dish!


• 2 tbsp. Olive oil
• 1 cup basmati rice
• 1 onion, diced
• 1 tsp. Garam marsala spices
• ½ can of chickpeas, rinsed and drained or more to taste
• 1 can of tomatoes
• 1 fresh tomato, diced
• 1 bag of spinach, coarsely chopped
• ¼ cup of plain yogurt or more to taste
• 1 bunch of coriander, minced


1. In a medium saucepan, boil 2 cups of water and 1 tbsp. of oil. Add rice, reduce to low heat, cook 17 min or until the water is absorbed.

2. In a deep skillet, warm 1 tbsp. of oil over medium-high heat. Sauté onion about 4 min. Add spices, cook 1 min. Add chickpeas, canned and fresh tomatoes and spinach, cook 3 min, stirring occasionally while crushing the tomatoes. Remove from heat; incorporate yogurt, salt and pepper.

3. Serve on a bed of rice and sprinkle with coriander to taste.
