There’s no better excuse than Cinco de Mayo to make homemade guacamole! And this is the best guacamole you’ll ever taste, if I do say so myself. Every time we have people over for summer BBQs I always get requests ahead of time to make this. It’s a huge crowd pleaser. This is perfect as a dip with tortilla chips, as a side for quesadillas, or an addition to Buddha Bowls.

Guacamole

• 2 avocados, peeled, pitted, and roughly chopped
• 1 lime
• 1 small tomato, diced
• ¼ cup red onion, diced
• 1 clove garlic, minced
• handful cilantro, roughly chopped
• 1 jalapeno, seeds removed, minced (optional)
• pinch of sea salt

Preparation:

In a medium size bowl, lightly mash avocado pieces with a fork. Be gentle, you still want to leave some small chunks in there. Squeeze the juice of one lime over avocado and stir. Add tomato, red onion, garlic, cilantro, jalapeno (if using), and sea salt. Stir and serve with chips!
