Try this simple, hassle free recipe for a quick and delicious dinner!


• 2 Zucchinis with peel, grated
• 1 container of plain yogurt
• 1 cucumber, peeled and sliced
• 2 tomatoes, quartered
• 3 green onions, chopped
• ½ tbsp. oregano
• 1 bunch of parsley minced
• 100 g. of feta cheese, crumbled
• 1/3 cup of mayonnaise
• olive oil
• 2tbsp. red wine vinegar
• 2 eggs, beaten
• 2/3 cup flour


1. Place grated zucchinis in a strainer, sprinkle ½ tsp. of salt, let rest 5 min. Press with hands to drain the zucchinis. Set aside.
2. For the sauce, in a small bowl, combine yogurt and mayonnaise. Set aside.
3. In a salad bowl, combine cucumbers, tomatoes, half of the green onion and oregano. Add 3 tbsp. of oil, vinegar and salt to taste.
4. In a bowl, combine eggs, parsley, the rest of the green onion, drained Zucchinis and feta. Stir with a fork. Add flour slowly while stirring. Add salt and pepper.
5. In a skillet over medium-high heat, warm 4 tbsp. of oil. Drop a spoonful of zucchini mixture In the skillet. Repeat and ensure to leave space between croquettes. Fry croquettes, turning them every 2 min for a total of 8 min and flattening them slightly. Remove from heat and repeat with the rest of the mixture. Serve with salad and sauce.
