For Valentine’s Day spoil your sweetheart and yourself with this Chocolate Lava Cake! This classic dessert will make you feel, just like its center, warm and gooey inside!


• 3 eggs
• 2 egg yolks
• 3 tablespoons sugar
• 1/2 cup unsalted butter
• 115 g dark chocolate, chopped (80% cacao)
• 1/3 cup flour
• 1 sapote nut (Mexican spice with a taste of marzipan and cherry) OR ¼ teaspoon of natural vanilla


1. Preheat oven to 375 ° F.
2. Generously butter and flour 4 (½ cup) ramekins.
3. In a bowl, whisk 3 eggs, 2 yolks and sugar together until the mixture is light yellow.
4. Use a microplane fine grater to grate half a sapote nut.
5. In a saucepan over low heat, melt the butter. Add the grated sapote nut and the chocolate and stir until the chocolate has melted. Gently stir in egg and sugar mixture and then gently fold in the flour.
6. Pour in the ramekins and bake for about 8 to 10 minutes. Il is normal that the cake appears to be not well cooked, the centre of the cake should be runny.
7. Unmould immediately onto a plate and garnish with red berries and icing sugar. Serve right away.

This recipe must be prepared just before you want to serve it. A warning for those eager bakers: This lava cake won’t flow and the center will harden if you prepare it before dinner.
