Homemade gingerbread for your holiday feast!

This gingerbread recipe is special because of the ingredients: fresh spices, orange peel and honey! Honey makes all the difference when it comes to consistency and taste.


• 250 ml milk
• 100g butter
• 500g good quality honey
• 500g flour
• 30g brown sugar
• 1 teaspoon baking soda
• 60g candied orange peel
• 1 teaspoon cinnamon
• ½ teaspoon aniseed
• 1 pinch ground cumin
• 3 teaspoons chopped finely fresh ginger
• ½ teaspoon salt


1. Preheat oven to 300 ° F.
2. Heat the milk in a saucepan and remove from the heat just before it simmers. Add liquid honey and stir to dissolve, then add the butter and mix until it melts completely.
3. In a large bowl, combine flour, brown sugar, baking soda, spices, orange peel and salt. Add the liquid mixture and stir slowly to avoid lumps.
4. Pour the mix in a cake pan, buttered and floured or lined with parchment paper. Make a groove lengthwise using a knife.
5. Put in the oven at least 1 hour and 15 minutes. Use the tip of a knife to check if it’s baked through, the knife should come out dry.
6. Let the cake cool down and unmold it.

This cake is best when it has cooled down completely: Be patient!
