Zucchini And Garlic Scape Soup


  • - Olive oil
  • - 1 yellow onion
  • - A small bunch of garlic scapes = 6-8 stalks
  • - 3-4 whole zucchinis with unpeeled
  • - 3 cups vegetable broth
  • - 1 teaspoon Herbes Salées (salt-preserved herbs)
  • - Pepper


1. In a pot over medium heat, heat oil and cook the onion

2. Chop garlic scapes and dice zucchinis

3. Add garlic scapes and zucchinis to the onion

4. Mix

5. Add broth, Herbes Salées and pepper

6. Let simmer until zucchinis are soft

7. Remove from heat and let cool down, then blend


Yields about 4 cups of soup.
